Cheese omelette
The classic for an almost empty fridge. Three eggs, a handful of cheese, and dinner is on the table in ten minutes.

Method
- Beat the eggs with a fork and a pinch of salt and pepper.
- Melt the butter in a frying pan over medium heat until it foams.
- Pour in the eggs, leave for 30 seconds, then draw the edges into the centre with a spatula.
- When the top is still slightly runny (2 to 3 minutes), scatter over the cheese.
- Fold the omelette in half, leave 30 seconds for the cheese to melt and slide it onto a plate.
💡 Tip : Take it off the heat early: it keeps cooking on the plate and stays soft.
